Nisaki Gin
Nisaki Gin is the founding, colour-changing expression from Project Peacock, founded by Sanchit Agarwal, Nidhi Kedia and Akhilesh Rajan and distilled in Goa at Adinco Distilleries in small 200-litre copper-pot batches, London Dry style, quadruple distilled for a smooth, throat-burn-free finish. It’s built on 16 organic botanicals, led by Macedonian juniper, a tea blend in the earl grey style, rose and lavender for florals, three types of citrus peel, and the butterfly pea flower that gives it its signature deep indigo colour. That colour shifts with whatever it’s mixed with: pink with tonic and other acidic mixers, electric blue with plain water, violet with soda. Bottled at 42.8% ABV, the founders’ own preferred serve is over ice with soda and a dash of lime, turning it a lovely lilac.
