West Cork Irish Whiskey comes from West Cork Distillers, founded in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy in Skibbereen, County Cork, starting out of a small room with two second-hand stills before growing into one of Ireland’s larger independent distillers. This is their entry blend, grain and malt whiskey matured in bourbon casks.
CHARACTER
Vanilla: sweet on the nose and finish
Honey: soft sweetness on the palate
Malt: the grain base coming through on the palate
Lemon: a light citrus lift on the nose
Cask: bourbon-cask warmth underneath
TASTING NOTES
NOSE- Light and gentle, sweet vanilla with hay and grain notes and a touch of lemon.
PALATE- Smooth and full for the proof, vanilla and honey warmth over a malty grain base.
FINISH- Short to medium, easy and light, with a last touch of vanilla sweetness.
