Hiding Champion is Wirra Wirra’s Adelaide Hills Sauvignon Blanc, made from fruit grown in the cool-climate sub-regions of Lenswood, Piccadilly Valley and Balhannah. The grapes are pressed and cold-settled, then fermented cool in stainless steel to keep the aromatics pristine, and the wine is bottled at 13% ABV under screwcap. The name is a nod to founder Greg Trott, a famous wanderer who, as the winery tells it, was in training to become the Olympic hiding champion. It is made to be drunk young and fresh. Pour it well chilled with salt and pepper squid and a green salad.
