400 Conejos is produced in Oaxaca, Mexico, from 100% Espadín agave (Agave angustifolia), the most widely used species in mezcal production. Espadín Joven means the agave hearts are roasted, fermented and distilled but never rested in wood afterward, so the spirit is bottled clear and unaged, carrying the smoky, earthy character of the roasting process directly into the glass. The agave hearts are cooked in a traditional underground pit oven before a wooden vat fermentation of roughly 28 days and double distillation in copper pot stills, the classic Oaxacan method.
